When talking, the noise gate can cut of the beginning and ending of statements, a configurable attack/release to prevent this.

sounds familiar to me.
unfortunately, it's because of the absence of a jitter buffer having a jitter buffer would prevent all these and also you can talk inside your network continuously with a acceptable latency.
