Scrolled through 80 exec chefs/head chefs adverts the other day - 95% of them without numerical salary. And I am talking about BIG hotel brands, not local independents. Paris, Lisbon, Monaco, Barcelona, London. What’s going on guys? Shocked to discover how many companies don’t even list a salary bracket. Mind-blowing. Salaries for Exec Chef can range from 50k-180k - you should enclose where you are on the scale. You will get much less applicants without listing salary. Let's take the guessing out of hiring.

The All-Party Parliamentary Group (APPG) for Hospitality and Tourism is launching an inquiry into ‘recruitment and retention of staff in hospitality’. The investigation will delve into why there are high vacancy rates in the sector, with more than 100,000 jobs to be filled in the past few years. It will also look at what the industry and government can do to make hospitality an attractive sector to work in. As an industry that has been historically filled by overseas workers, the inquiry will also address how the sector can balance the utilisation of UK employees while delivering a high-quality customer experience. The number of unfilled hospitality roles has remained steadily above 100,000 since the start of the pandemic in 2020, and many staff members also returned overseas after Brexit. There were 112,000 vacant hospitality jobs at the end of 2023, according to the Office for National Statistics (ONS), up from 89,000 before the pandemic. It is asking businesses to make submissions to its inquiry, which will end by making a series of recommendations to government. The deadline for submissions of written evidence is Friday 14 June, with a maximum of 1,500 words. Evidence should be submitted to policy@ukhospitality.org.uk. With Labour winning the UK election, the hospitality sector could see significant changes. Here’s what stands out to me: Employment Policies & Workers’ Rights Higher Minimum Wage: Labour plans to raise the minimum wage to at least £10 per hour, increasing payroll costs. Zero-Hours Contracts: Eliminating these contracts will change staffing practices and possibly increase costs. Enhanced Workers’ Rights: Better sick pay and holiday entitlements will benefit employees but add to operational costs. Brexit & Immigration Immigration Policy: A more relaxed approach could ease labour shortages. Trade Agreements: Changes could affect food and beverage imports, impacting supply chains and costs. Taxation & Business Rates Business Rates Reform: Potentially reducing financial pressure on SMEs. Corporate Tax Changes: Could impact financial planning and profitability. Sustainability & Environmental Policies Green Initiatives: New regulations on waste management and energy use will require investments in eco-friendly practices. Support for Small Businesses Increased Funding and Grants: More support for growth and modernization of independent businesses. Tourism and Local Economies Tourism Promotion: Increased footfall and investment in local economies would benefit our venues. Labour’s policies could bring both challenges and opportunities. We’ll need to adapt to regulatory changes and potential cost increases while leveraging new support mechanisms and a better labour market. Exciting times ahead for our industry! Introducing this week’s #HotelierOfTheWeek !👏 John Angus is Managing Director at Switch Hospitality Management Limited and has worked in the hospitality industry for more than 30 years, starting as a Management Trainee for The Rocco Forte Hotels. John’s career took him to the Forte, Accor Hotel and Firoka groups, and he later joined The QHotels Collection and Macdonald Hotels & Resorts as a Regional Director, before establishing his own asset management company, Switch Hospitality Management, in 2020. Today, John and his team manage six assets within their portfolio with around 100 employees, all of whom are trained in-house to maintain the ‘Switch standard’ of five-star service. “My passion and personal motivation has always been to provide exceptional standards - not only for guests, but also for our employees and clients,” said John. When asking John what he loves most about his role, he said, “At Switch, every business we run is our business and this is our USP. It gives us a unique perspective and we strive to be aspirational in everything we do, from customer experience to employee satisfaction. I love working alongside my team - we stand out from our competition as we’re all individual, skilled entrepreneurs with a shared passion for hospitality.” As a seasoned leader in the hotel sector, John emphasises the importance of authenticity and personal values for those looking to advance their careers in the industry. He advises newcomers to seek guidance from trusted mentors, surround themselves with inspiring and motivating individuals, and to work diligently. "If you work hard, the sky’s the limit," John said, highlighting the limitless potential for those who remain true to themselves and dedicated to their craft. Reflecting on a pivotal moment in his career, John recalls managing a substantial multi-million-pound budget and overseeing hundreds of employees. Despite the scale of his responsibilities, he found himself discussing the cost of Christmas trees for three hours with the company owner. This experience with extreme micro-management profoundly impacted him. Determined to foster a different environment at Switch Hospitality, John focuses on creating a people-driven and values-led business. He empowers his teams to perform at their best, believing that the company’s impressive results are a testament to this approach. John identifies two significant milestones in his career. The first was in 2021 when Switch was recognized as the ‘Best Hospitality Employer’ in Birmingham and ranked No.16 in the UK by The Caterer. The second was when Park Regis Birmingham, Switch’s flagship hotel, won the Gold award for ‘Best UK Hotel’ at the M&IT Awards in 2022 for the second consecutive year. 𝗕𝗿𝗶𝘁𝘃𝗶𝗰 𝗚𝗕 𝗱𝗲𝗹𝗶𝘃𝗲𝗿𝘀 𝘀𝘁𝗿𝗼𝗻𝗴 𝗳𝗶𝗿𝘀𝘁-𝗵𝗮𝗹𝗳 𝗿𝗲𝘃𝗲𝗻𝘂𝗲 𝗴𝗿𝗼𝘄𝘁𝗵: 😍 💹 Britvic plc reported revenue in its Great Britain division increased 8.8% to £592.2m for the six months to 24 March 2024. Turnover from hospitality was 5.6% during the period. It said that volume grew 2.6%, with 5% growth in the second quarter. It said that average realised price growth of 6.0% was driven through a combination of improved mix, price realisation and optimising promotional activity. Pepsi was a key driver of growth, with revenue increasing 8.5%, benefiting from the brand refresh investment in March and growth in cans, enabled by additional capacity to meet growing consumer demand. Other growth highlights include Tango, J2O, Fruit Shoot and Lipton. Robinsons performance was stable compared with last year, while Rockstar continued to be “challenging”. Group revenue in the period increased 11.2% to £880.3m, while pre-tax profit rose 10.1% to £59.9m. Chief executive Simon Litherland said: “I am delighted with our excellent first half performance. Revenue growth of 11.2%, underpinned by volume growth of 4.4%, has translated into adjusted Ebit growth of 17.7% and earnings per share growth of 18.5%. We are also announcing our third share buyback of £75m over the next 12 months, reflecting our strong earnings, free cash flow generation, and positive outlook. Looking forward, I am confident that we will deliver a strong full-year performance. In the medium term, I firmly believe the continued execution of our strategy and growth drivers will allow us to sustainably outperform both the market and our historical top-line growth rate, leaving the company poised to continue our long-standing track record of delivering outstanding returns for our shareholders.”
