I think we should start by acknowledging that the words Mastery and Impress are probably the wrong goals to aim for. Impressing doesn't come with Mastery of a specific topic and doesn't even have to be about technical skills, it can be about soft skills or people and operations management skills. Instead of trying to impress, aim to be genuine, say I don't know when you don't, and avoid trying to answer all questions. After all, no one likes a know it All kind personality :)

In the interview process we should focus on IT Service management or just service management as the concepts we working with and not just ITIL which is one framework of best practices to deploy improvements to an Service management system.

ITIL Mastery is indeed a big thing, If you have knowledge and experience in ITIL framework, it is a kind of mandatory requirement for IT Service Management. Incident Management, Change Management, Problem Management practical experience should be highlighted in Interviews.

I think we should focus on Observability. It's the new Monitoring that covers Logs, Metrics, and tracing. In a world where the Cloud is the primary way to deploy and manage IT systems, Observability is the major focus, especially if you work with distributed systems. Start by looking up the term and learning the basics. Then, look into tools like Prometheus, Grafana, OpenTelemetry, etc...
