Are you interested in making more informed winemaking decisions when it comes to picking and élevage? I’ve been working with Bound.wine, co-founded by Keaton Crow during their beta phase and the way I think about wine structure has been drastically affected! This isn’t your run of the mill UV-Vis spectrophotometer bench top - we’re looking at Harbertson-Adams phenolics data to better understand terroirs like To Kalon and our own Montecillo vineyard and seeing how they measure to the Bound.wine database of well known and high scoring wines of the world. The insights compiled on Bound.wine in combination with Keaton’s expertise have already led to better understanding of when to sulfur post ML and exploring picking earlier - something we all need to consider in the years to come to adjust for trends of warming in our beloved wine growing regions of California. First wine, then beer! Researchers from the Czech Academy of Sciences have compared hops performance during the last 45 years. These are the conclusions: - harvest is 20 days earlier - average yield per area has gone down - alpha acid content, the hops quality factor, is down too The suspect is the climate. Can our wine and vineyard product be useful to hop growers, the future will tell. My guess it should be. #wine #beer #climate #data

In historical times, crafting whole sorghum involved harvesting the mature sorghum plants, manually threshing the grains to remove the husks, and air-drying them. A steady stream of engaging information is what the team needs! ⬇ The lifecycle of a grapevine is a fascinating journey that directly influences the quality and character of wine. It begins in early spring when the vines awaken from dormancy, and small buds on the vine start to swell and eventually burst into new shoots. As temperatures rise, these shoots grow rapidly, developing leaves and, later, flower clusters. By mid-summer, the flowers have been pollinated, usually by the wind, leading to the formation of tiny green grape berries. Over the following weeks, these berries go through "veraison," a process where they soften and gain color—red or purple for red varieties and golden for white. This phase marks the onset of sugar accumulation, essential for fermentation. By late summer or early fall, the grapes reach full maturity, measured by sugar, acid, and tannin levels, making them ready for harvest. After harvesting, the vine's leaves change color and fall, and the plant enters a period of rest, storing energy in its roots to survive the winter and prepare for the next growing season.
