This is a really quick, easy and tasty recipe for fish skewers that can be made in just 10 minutes! I usually make these when I’m in a hurry and want something healthy and delicious for dinner. You can use any type of fish that you like, but I prefer to use salmon or tuna.
You will need:
- 1/2 kg of boneless fish cut in cubes
-1/2 a lemon
-1 tablespoon of olive oil
-salt and pepper
-1/4 cup of chopped fresh parsley
- 2 Tbsp of chopped garlic
-2 tbsp of Cornflour
- 1/2 tsp of paprika
-1 tsp of Chilli flakes
Soak the bamboo skewers in water for at least 30 minutes. Preheat your grill ( or grill pan) to medium-high heat. Cut the fish into 1-inch cubes and season with salt, pepper and lemon juice. Thread the fish onto the skewers, about 5 or 6 pieces per skewer. Grill for about 2-3 minutes per side, or until the fish is cooked through.
Remove from the grill and drizzle with olive oil. Sprinkle with fresh parsley and serve immediately.

Blackened catfish is especially delicious! The reason we have fish in the river is because most of the water that flows into it has been cleaned by wetlands.
The river has an enormous watershed, but it’s still just a river and watershed like any other. The hundreds of thousands of acres of wetlands in states in that watershed are needed to keep the river alive. If one state, as Indiana plans to do (https://lnkd.in/gJtkyF7V), strips all protections from their wetlands and paves many over, the river loses the clean water that wetland used to provide.
Some will say, “So what? We’re not filling ALL the wetlands!” OK, but what if every state in the Mississippi River watershed decided to do the same thing?
Even one state destroying its wetlands is a disaster for the river and for the other states in the watershed, which will need to shoulder an even bigger share of the burden of keeping the river clean.
