It’s refreshing to see a major coffee publication finally talking about this!!! Years ago I began talking about this and finally seeing this come to light isn’t just validating, it affirms my believe that coffee shops have more power than they know to help control their costs. Keep reading and I’ll explain. As most people who follow me know, I’ve been talking about this for a very long time. Mostly… In the past year. I even mentioned this in my top five trends for 2024. The difficulty here of course is that creating a concentrate that makes sense as an espresso substitute for cold coffee based beverages requires that the concentration be at least close to espresso; around 10 TDS. “Great!“ You might say. “We’ve been doing our own cold brew for many years!” But… If you are using immersion style cold brew, you’re not going to get concentration levels even close to espresso. Because coffee based drinks use espresso shots, you won’t be able to achieve the same kind of drink experience. Keep in mind that the TDS (total dissolved solids) should match the recipe you have been using if you are using a concentrate. Yes, you can take the easy way and purchase these concentrates… And there are a lot out there. But is that the best solution? Believe it or not, it’s not that hard to do it yourself if you have the right equipment and, that equipment is accessible and not nearly as sophisticated or expensive as you think. If you are interested in finding better methods of extraction that will give you higher concentrations that are at least close to espresso strength, get you about 20% yield and produce flavors that will pair well with your menu items, please let me know or share your own experiences in the comments below on how you are tackling this. I would politely ask that you not advertise branded concentrates you are selling. However, if you are purchasing a concentrate and it’s working for you… Would love to hear about that! Also, if you’re going to buy equipment to get high concentrate remember that the company that is behind it matters as well. It’s important to not only get extraction solution that will work but also that the company behind the brand has a deep understanding the coffee industry and experience in the retail sector. No matter who you are, I wish you the best whether you’re selling equipment or buying equipment but it’s absolutely critical for you to do the math because as I have said many, many timed, COGS are The simplest way to understand the foundation of your cost center. Making your own concentrate will help control those costs. And trust me… It’s not as hard as you think. :-)

In line with this, there are many factors that roasters need to consider to best highlight a coffee’s flavours and aromas when extracted as espresso. These considerations ultimately have to be accounted for when roasters source their coffees, but the roasting process itself plays a huge role in influencing sensory profile.
