The Old Angle Tavern in Ohio City was a fitting location to discuss produce vendor Tom Boutros’ career at the venerable West Side Market. Only a three-minute walk down West 25th St. from the market, the tavern delivered a tasty plate of house-cut fries paired with Boutros’ favorite aioli sauce as he explained, “They’ve been with us since the beginning.” Tom and his brother Joe started serving the chef at the Old Angle Tavern shortly after renting their first vegetable stand and opening Boutros Brothers Produce at Stalls 32 and 34 at the West Side Market in 2003. Beginning in the late 1990s, both brothers worked on and off at the market before making the decision to open their own stand. Since they launched Boutros Brothers Produce in 2003, they moved to stalls 42, 44, and 46 and evolved to supplying many restaurants in Cleveland, Lakewood, and Parma. These restaurants include the West Side Market Cafe, Johnny Mango, and the Old Angle Tavern, their first account dating back to that original stall. Today, Boutros Brothers supplies an extensive variety of quality vegetables and specializes in fresh, homegrown mushrooms. Throughout his 20-year tenure at the market, Boutros has also served as both vice president and president of the United West Side Market Tenants Association, the group representing business owners at the market. The more things change, the more they stay the same, Boutros said. What has always made the West Side Market unique is the fact that the stands are run by local owners who know their product and deliver quality service with a personal touch. Today, let's discover our northernmost and southernmost pizza joints. ❄️ Our northernmost spot is in Norilsk, Russia, on Taymyrskaya Street! This pizzeria is beyond the Arctic Circle, where snow covers the ground for 7 to 9 months, and subzero temperatures linger around 240 days a year. ☀️ Our southernmost point is in Lagos, Nigeria, on Bishop Aboyade Cole Street! Here, it's summer all year round, with no snowfall and temperatures hovering around 30 degrees Celsius (86 degrees Fahrenheit!) during the day throughout all 12 months. Despite these pizzerias being so geographically diverse, they share one thing: Dodo Pizza! Thanks to our standards and the support of our partners, regardless of the region, we know how to consistently make high-quality pizza on an international scale. Are you choosing the best deal out there, or maybe you're opting for the lowest value? Here's what happened when I dissected Buffalo Burger's offers on talabat. Buffalo Burger has multiple discounts on Talabat, three of which are particularly interesting: - Offer One, Buff Combo - One Sandwich (200gm): 185 LE instead of 232 LE, saving you 47 LE - Offer Two, Double Trouble - Two Sandwiches (200gm each): 395 LE instead of 464 LE. It's basically double the offering of Offer One, saving you 69 LE. It's easy to notice that buying Buff Combo twice is better than a lump sum in Double Trouble, as two buff combos saves you 94 LE Upon noticing this descrepancy, I checked other offers & found out that the smallest offer actually provides the highest value! - The third offer, Buffalo Deal - One Sandwich (150gm): 125 LE instead of 150 LE In simple terms, the real value of each offer is - Buff Combo: 1.08 gm/LE - Double Trouble: 1.01 gm/LE (seemingly biggest offer, lowest value) - Buffalo Deal: 1.2 gm/LE (seemingly smallest offer, highest value) Fun Fact: After ordering multiple Buffalo Deals yesterday, Talabat removed this offer after less than 12 hours from my ordering time. This pricing discrepancy led me to wonder: who sets these prices, and how do such inconsistencies affect consumer behavior? One of my best guys owns a pasta restaurant in Lagos. His specialty? Spaghetti. However, by the end of October 2023, inflation forced him to raise prices. Soon after the price increase, he noticed a significant drop in customer footfall—a worrying 45% decrease. It was clear that the higher prices were impacting his sales. However, simply lowering prices wasn't an option, as it would negatively impact his profits and hinder his ability to sustain the business. This also impacted cash flow, reducing the amount of money available to purchase stock for the restaurant. So, we got to work. We conducted research and had honest conversations with his customers to understand their needs and purchasing power. It became evident that the target market for this restaurant—the average salary earner in the area—was feeling the pinch of inflation and needed more affordable options. Our solution? Introduce low-cost food offers that would cater to the financial reality of his customers. This strategy was implemented at the beginning of April, and the results have been remarkable. In just two months, sales have skyrocketed, and my friend has had to hire two additional servers to manage the weekend rush! It's a testament to the power of adapting your business to the needs of your target market. Here are the key lessons from this experience: 1. Know your target market inside out: Understand their purchasing power and tailor your offerings accordingly. 2. Adapt to survive: Be willing to adjust your strategies to meet the changing needs of your customers and the market. 3. Cash flow is king: Ensure your pricing allows for a healthy cash flow. In the words of Darwin, “The species that survives is the one that is able best to adapt and adjust to the changing environment in which it finds itself”
