Pioneering the Future of Sustainable Food Production Very few things are as fundamentally important as our food - it should be nutritious, affordable, and, of course, delicious. At Teknologisk Institut this is a top priority. I recently had the privilege of attending the 'Food and Feed of the Future' conference in Lyon. The event posed critical questions and sparked insightful discussions. Can animal-based production systems truly become sustainable? How can we leverage biotechnology to reduce emissions from our food and feed systems? What does sustainability really mean in this context? And how will cell-based agriculture contribute to protein production? Moreover, the importance of maintaining uncompromised #foodsafety was reiterated, as it continues to be the non-negotiable entry ticket for any new food product entering the market. While there is no single 'silver bullet' solution that will propel us into a green transition, the conference shed light on the promising new knowledge and technologies emerging in the field. Proud to be working with Anne-Cathrine Hutz (Preißer), Thibault Godard, Mazen Rizk, and the entire Infinite Roots® team to enhance our food system using biotechnology. Through innovative fermentation processes, they are crafting nutritious, palatable, and eco-friendly food options. Infinite Roots’ method is not only rapid and efficient but also dramatically reduces environmental impact — producing food in days, cutting CO2 emissions by 35 times, and slashing water usage by 215 times compared to traditional beef production. Imagine the impact: replacing just one beef steak with a mycelium steak in Germany could equate to removing over 200,000 cars from the roads. Infinite Roots is opening up a universe of sustainable nutrition and demonstrating that smart innovation can lead to tangible environmental benefits and a healthier planet.

FoodTech Innovation Sand-box for Switzerland? The Swiss Government has been requested to work out a framework under which novel technologies such as cell-based or precision fermentation can be experimented with and where certain interaction would happen with customers.
