whether FOH, BOH or both, everyone needs both. pre-covid there was an influx of people willing to work grueling hours, get paid a [decent] hourly rate, and we're willing to work. post covid has totally changed the game. people want to work remotely or not at all. you can still poach but in doing so you burn bridges with fellow friends. in terms of BOH, even the core group of kitchen staff want more than they have received previously and I for one have found that a skeleton crew on the line is so frustrating to try and keep up. being a leader in restaurant, catering, or just cooking needs a leader who is willing to dive in and work with, not lead from experience. Over the past few weeks, I have noticed that most of the chain bar/restaurants were posting help wanted positions for bartenders. The job description clearly matched the bartender role. However, ZERO of the 10 jobs I interviewed for actually EVER hire bartenders from outside the restaurant. I was never notified prior to the interview that I was wasting my time going, so I spent a lot of my time and stress only to find out these places were willing to hire you only as a server at 1/2 the pay of the bartender position. I know the value of working as a server for a few weeks to get trained in the food service areas before having to learn the bar processes and drink recipes, but only 1 of the 10 managers would even be honest about whether a bar position might even be available. It felt like a huge bait and switch, and almost shook my confidence in continuing the job search at all. Why do companies do this and how do you find the job you are seeking if those posting the jobs are not being truthful?
