I know New Year’s resolutions have gotten a bad rap, but I still can’t help but think people have an innate urge to start each year off fresh.
If this resonates with you and one of your goals is to be healthier in 2024, I’m here for you.
One of the best things you can do is to have a breakfast full of healthy fat and protein to set yourself up for success.
A lot of you may think, “I’ve heard that before, there is just no way I can have breakfast. I’m too busy. I’m running out the door in the morning.”
Well, these Quiche Bites make it a whole lot more possible!
You can either use a muffin tin to make these bite-size, or use a pie dish to make a whole quiche. Either way, use the same great recipe and it provides a balanced breakfast that you can grab from the fridge and run out the door.
Try them this weekend and feel free to mix it up with whatever you've got in the fridge!
Ingredients:
- 6 large eggs
- ¾ cup almond milk
- 5 slices of crispy bacon
- ½ cup goat cheese
- 1 ½ cup broccoli
- ½ cup chopped red onion
- 1 tsp salt
- 1 tsp red pepper (black pepper works well too!)
- 2 tsp garlic granules
Instructions:
- Preheat the oven to 350F
- Cook the bacon over medium heat in a cast iron skillet until crispy. Remove the bacon and place it on a paper towel to cool. Turn the heat down to low.
- Use a pastry brush and brush the bacon fat to cover the surface of each section of the muffin tin. Make sure to coat the surface really well to make the clean-up process as easy as possible. If you choose to omit the bacon or use a different type of protein, butter is another great option to coat the surface.
- Chop the broccoli and onion into very small pieces. Add them to the cast iron skillet with the remaining bacon fat.
- Add salt, red pepper, and garlic granules over the vegetable mixture.
- Stir and let cook for about 5 minutes.
- Whisk 6 eggs in a large bowl.
- Add the almond milk to the eggs and whisk until fully combined.
- Add the vegetables and bacon to the egg mixture. Stir.
- Add the goat cheese. Stir.
- Use ¼ cup measuring cup to fill each section of the muffin tin evenly.
- Pop it in the oven and cook for 20 minutes or until the tops are golden brown
Enjoy!

We think this is extremely clever from FUNKIN COCKTAILS | B Corp™ and here is why.
RTD cocktails index highest with the under 35’s all the data points in this direction. This cross section of Gen Z and early Millennials have something in common – they devour social media and its where they spend a lot of their time.
The content hits the right markers.
✅ it’s an obligatory and slightly wacky April Fool prank
✅ the production value is high. Funkin have clearly invested many ten’s of thousands into the activation
✅ highly shareable content in the social networks Funkin want eyeballs
The overwhelming tick here though is Thomas Gray.
Most people haven’t heard of Thomas Gray, but many of the target demographic have. Thomas Gray is a social media comedian who has a loyal following (if you know you know) plus has the ability for delivering viral content (his Stag Do sketch has millions of views on You Tube alone).
Thomas Gray isn’t the biggest social comedian but using him to front the campaign will have a halo effect for Funkin of being in the know and relevant.
This is something we are seeing more and more of.
Drinks brands aligning with cultural influencers to leverage their ability to produce highly shareable content (Check out - Top Jaw, Archie Curzon and MOB)
A quick glance this morning shows the media and social reach is gathering steam.
Funkin have been smart because they have done the simple things well. Know your target audience, create high quality shareable content and anchor to a relevant social media influencer.
The trick here is to be data led and understand what holds cultural significance for your audience.
