Since the weekend, my social feed has been flooded with commentary about the chef who posted his all-male, all-white chef brigade. The post went viral, and made its way into the national press, less because of the picture and more because of his reaction to the picture – which was zero accountability. I personally have nothing to say on the matter, as instances like this are precisely why Be Inclusive Hospitality exists, and the quote below sums up what we Be Inclusive Hospitality does and how we will do it. “The secret of change is to focus all your energy, not on fighting the old, but on building the new”- Socrates. Great insight in the world of cooking

I'll be the first to admit, I am not a huge reader (something I'm working on). But, when there's something I can get into, I usually talk everyone's ear off about it post-read. While on vacation, I read Will Guidara's Unreasonable Hospitality. I loved it, and think whether you have a background in hospitality or not, I'd implore you to read it! It provides Will's amazing story about his upbringing, dedication to his team, the restaurant industry, and both his successes and failures over the course of his career. There's most definitely something everyone can learn from, big or small. Of course, my favorite portion was coffee related, when Will talks about the importance of the after meal cup of coffee, and how often it's neglected, even at some of the finest restaurants in the World! "Finally, I got the cup of filter coffee I'd been served after dinner. It was a perfectly fine cup of coffee, but because everything else about that meal had been so unbelievably 𝘱𝘦𝘳𝘧𝘦𝘤𝘵 perfect, that just-okay cup of coffee stood out". Have you ever heard the term that excellence never goes on sale? Never does, right? No matter what, don't ever discount yourself. The first step in knowing what you want and in getting what you want is knowing what you are worth. How do you value yourself and how do you value your time? If you sell yourself short, nobody else is going to value you to the extent that you may think you do. You have to place a value and know your worth before anything else. There have been people, chefs, clients of mine who've taken some pretty significant positions that pay really astronomically well, even in one of the tough economies that we've seen, because their level of excellence is where it needs to be. I would always urge excellence. I will never be considered a commodity, and I would never encourage anybody to compete on the low end of the price spectrum. Do you agree?
