Recently, I read an article about labor challenges. One line that caught my attention was: "Hospitality work is unskilled labor." As a self-proclaimed industry guy, I beg to differ. Let's consider the skills of a seasoned server as an example: 🧽 Knowledge of food hygiene and cross-contamination. 🌽 Awareness of complex food allergies. 🍽️ Understanding of culinary techniques and ingredients. 👋 The art of engaging with hundreds of customers daily, and always bringing their 'A' game. 🗣️ Conflict resolution skills to prevent or solve customer issues. 🙇♀️ Diplomacy when dealing with complaints and sour moods. 📜 Mastery of their menu and the compliment of flavors on your plate. 🍷 Sommelier-level knowledge of wines, spirits, and hot or cold beverages. ☕ Storytelling - even if it is simply the story behind the origin of your coffee. 🤹♂️ Multitasking and prioritizing the invisible workload like a pro. 🔍 Ability to read the room and gauge the emotions at their table. ⏰ Working long hours and maintaining a positive demeanor. These aren't unskilled tasks. They're talents, honed in a challenging career. With 20+ years of experience both in and supporting the industry, I can attest to this. Every job in the food industry expands a skill set. Whatever job you're in, whether it's waiting tables as a food server or writing a business plan and beyond, many ways exist to develop, grow and learn. Some of my fondest memories working in the food industry were as a food server at different restaurants, even when I was credentialed professional. Yes, you read it correctly. First, as a registered dietitian nutritionist working a minimum wage job was super humbling. I developed a greater appreciation for my education and empathy for those who may have not had the support I received to earn several college degrees.
