P&K is excited to announce a recent publication comparing traditional preference mapping techniques to a computational machine learning approach. The paper is coauthored by Vanessa Rios de Souza and Viktor Plamenov from Aigora and Richard Popper, Patti Wojnicz, and Juan Martinez from P&K. Using a case study, the paper highlights the similarities and differences between the two approaches in terms of the drivers of liking each identifies, the derived optimal sensory profile and each model's predictive power. Food trends for 2024 indicate continued consumer interest in less processed foods and sustainable nutrition alternatives. Companies that wish to target consumers that embrace a “clean eating” lifestyle may benefit from a new tool to select research participants in their product development research. The recently developed Teruel Orthorexia Scale (TOS) shows promise as a way to identify those consumers most interested in healthy eating. Plant-based foods, especially plant-based meat alternatives, have been struggling to achieve broad consumer acceptance. Taste and texture remain significant barriers for plant-based meat. In a recent study published in the journal Appetite, even repeated consumption of plant-based meat alternatives did not improve liking. That study also pointed out the complexity of testing plant-based meat. Consumer liking varied substantially depending on the meal recipe. Then there is the question of whether manufacturers are on the right track trying to make plant-based products taste like the animal protein alternatives. This may not be what all consumers are looking for. The right product development research, among the right consumer target, is required to give products in the category a chance to succeed.
